Lamb Shank
Lamb Shank is a guaranteed crowd pleaser and one of our all-time favourites. The deep-flavoured dish melts in your mouth; rich, saucy and utterly indulgent. While it is a restaurant quality dish and may seem intimidating to make, it simply involves throwing the ingredients in a pot and waiting for the magic to happen.
Ingredients
- 2 kg Lamb shank
- 1 Onion (peeled and chopped)
- 2 carrots (peeled and chopped)
- 2 cups of orange juice
- 2 cups of Red wine
- Half a bottle of Port wine
- Half a bunch of celery
- Thyme
- Rosemary
- Parsley
- Salt to taste
Spices
- Half a Tbsp of Black peppercorn
- 5 Bay leaves
- 1 Cinnamon bark
- Half a Tbsp of Fennel seeds
- 2 Star anise seeds
Method
- Preheat the oven to 180 degrees C
- Chop the onions, the celery and the carrots and add to an oven-proof pot
- Add the lamb shank, the herbs, and the spice mix
- Pour in the red wine, orange juice and the port
- Cover with foil and leave to cook in oven for 2 and a half hours
